Creamy broccoli lentil soup with mustard seeds and microgreens

Yield: 6 servings

Ingredients: 
  • 1 Tbsp olive oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 cup red lentils, rinsed
  • 1 large head of broccoli including the stems, chopped into large pieces *Reserve a cup of raw broccoli to add to soup at the end*
  • 4 cups vegetable stock
  • 1 can light coconut milk
  • 2 Tbsp lemon juice
  • 2 Tbsp mustard seeds,
  • Microgreen spouts – broccoli, radish, pea etc.
  • Salt to taste
Method: 
  1. Heat oil in large soup pot.
  2. Add onions and sauté for 3-5 minutes.
  3. Add garlic and sauté for 1-2 minutes.
  4. Add lentils, broccoli (remember to reserve a cup of raw broccoli to add to the soup at the end), stock and coconut milk.
  5. Bring to a boil and cover.  Cook on medium low for 15-20 minutes, or until thickened and lentils are soft.
  6. Add the remaining raw broccoli.
  7. Turn off heat and stir in lemon juice.
  8. Puree the soup with an immersion blender, while leaving some pieces of broccoli whole.
  9. Serve topped with mustard seeds and microgreens.

Shauna Lindzon

Shauna Lindzon is a Registered Dietitian with over 25 years of experience.  She worked as a Clinical Dietitian at Sunnybrook Health Science Centre in Nephrology and Neurosurgery for 12 years.  Since leaving the clinical setting, she has been working in the community as a Consulting Dietitian.

She sees private clients in downtown Toronto and over the years, she has been a food industry consultant and media spokesperson for a variety of companies.  Since 2013 she has worked as a program developer and nutrition leader at Wellspring Cancer Support Network and also enjoys doing corporate lectures for downtown Toronto clients. 

Most recently, she has developed cooking demonstrations that combine scientific knowledge with culinary education for her clientele.  Her demonstrations are unique, informative, delicious and a lot of fun.  She is a lecturer for BizLife Solutions, LifeSpeak and a nutrition consultant for AkiraMD, Occasions Catering, BioPharma Services, High Point Wellness Centre and NDC at Work.  Crowd Wellness named Shauna as one of the top 15 Dietitian’s in Toronto in 2015. 

Her main goal is to translate the science of food into practical terms for her clients, while focusing on reducing the risk of chronic disease and striving for them to achieve optimal health.
